Bruschetta with a fun fruity twist! Perfect for a warm summer evening with good company and a glass of crisp white wine.
Ingredients
  • ½ large cantaloupe
  • ¾ cup finely diced sweet onion
  • ¾ cup finely diced red bell pepper
  • ⅓ cup finely chopped Italian parsley
  • 1 cup fresh basil leaves, torn
  • ¼ cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ⅛ teaspoon freshly ground black pepper, or to taste
  • Pinch red pepper flakes
  • Shaved aged Parmesan cheese
  • 0.5 large cantaloupe
  • 177.44ml finely diced sweet onion
  • 177.44ml finely diced red bell pepper
  • 78.86ml finely chopped Italian parsley
  • 236.59ml fresh basil leaves, torn
  • 59.15ml balsamic vinegar
  • 25.56g olive oil
  • 12.78g lemon juice
  • 2.13g salt
  • 0.53g freshly ground black pepper, or to taste
  • Pinch red pepper flakes
  • Shaved aged Parmesan cheese

Preparation
STEP 1

Remove seeds and rind from cantaloupe. Finely dice cantaloupe and add to a large bowl.

STEP 2

Add onion, bell pepper, parsley, basil, vinegar, oil and lemon juice. Stir gently to combine.

STEP 3

Add salt, black pepper and pepper flakes. Chill.

STEP 4

Serve on crusty bread slices. Liberally garnish with Parmesan cheese and a drizzle of olive oil.
