Cantaloupe Bruschetta

Ingredients
- ½ large cantaloupe
- ¾ cup finely diced sweet onion
- ¾ cup finely diced red bell pepper
- ⅓ cup finely chopped Italian parsley
- 1 cup fresh basil leaves, torn
- ¼ cup balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- ½ teaspoon salt
- ⅛ teaspoon freshly ground black pepper, or to taste
- Pinch red pepper flakes
- Shaved aged Parmesan cheese
- 0.5 large cantaloupe
- 177.44ml finely diced sweet onion
- 177.44ml finely diced red bell pepper
- 78.86ml finely chopped Italian parsley
- 236.59ml fresh basil leaves, torn
- 59.15ml balsamic vinegar
- 25.56g olive oil
- 12.78g lemon juice
- 2.13g salt
- 0.53g freshly ground black pepper, or to taste
- Pinch red pepper flakes
- Shaved aged Parmesan cheese
Bruschetta with a fun fruity twist! Perfect for a warm summer evening with good company and a glass of crisp white wine.
Preparation
STEP 1
Remove seeds and rind from cantaloupe. Finely dice cantaloupe and add to a large bowl.
STEP 2
Add onion, bell pepper, parsley, basil, vinegar, oil and lemon juice. Stir gently to combine.
STEP 3
Add salt, black pepper and pepper flakes. Chill.
STEP 4
Serve on crusty bread slices. Liberally garnish with Parmesan cheese and a drizzle of olive oil.
