Heat oven to 325°F.
In a mixing bowl, combine walnuts, salt and cayenne; toss together. Add maple syrup and stir until nuts are well coated.
Pour onto a parchment-lined baking sheet and spread nuts into a single layer (use two baking sheets if necessary). Bake for 15-20 minutes, stirring once or twice, until walnuts are nicely roasted.
Remove from oven and stir carefully, then spread to separate the nuts while they are still warm. Cool to room temperature. Store in an airtight container for up to three weeks.
