- ⅓ cup apple cider vinegar

- 4 cups chopped fresh rhubarb (about 1 1/2 pounds)
- ½ cup chopped red onion
- ⅓ cup chopped dried tart cherries

- 78.86ml apple cider vinegar
- 12.78g minced ginger
- 12.78g ground garlic
- 4.26g cumin
- 2.13g cinnamon
- 2.13g ground cloves
- 1.07g crushed red pepper flakes
- 946.35ml chopped fresh rhubarb (about 1 1/2 pounds)
- 118.29ml chopped red onion
- 78.86ml chopped dried tart cherries
Chutney is a great option when craving an aromatic sauce with both sweet and sour components. This recipe highlighting the tartness of rhubarb pairs wonderfully with lamb.
Preparation
STEP 1
Combine sugar, vinegar, ginger, garlic, cumin, cinnamon, cloves, and red pepper flakes in a pot.
STEP 2
Simmer over low heat, stirring until sugar dissolves.
STEP 3
Add rhubarb, onion and cherries. Increase heat to medium-high and cook until rhubarb is tender and mixture thickens slightly, about 5 minutes. Serve warm or cold.
