Ingredients
- 3-4 ears of corn, husks removed
- ¼ cup extra virgin olive oil
- 2 tablespoons vinegar (apple cider, champagne, white wine, or red wine)
- Salt and pepper
- ¼ cup chopped shallot (or red onion)
- 3 tablespoons chopped fresh herbs, one or a combo (basil, chives, parsley, cilantro, or dill)
- ½ cup crumbled feta, optional
- 3-4 ears of corn, husks removed
- 59.15ml extra virgin olive oil
- 25.56g vinegar (apple cider, champagne, white wine, or red wine)
- Salt and pepper
- 59.15ml chopped shallot (or red onion)
- 38.34g chopped fresh herbs, one or a combo (basil, chives, parsley, cilantro, or dill)
- 118.29ml crumbled feta, optional
Seasonal corn is so delicious we don’t want to waste a single kernel! This simple salad highlights it’s magnificent, sweet summer flavor. There are some options here....you do you!
Preparation
STEP 1
Bring a large pot of salted water to a boil. Blanch corn until kernels are bright and slightly tender. About 3 minutes. Remove and cool.
STEP 2
Cut corn kernels off cobs into a large bowl.
STEP 3
Add olive oil and vinegar. Toss to coat. Season with salt and pepper to your taste.
STEP 4
Add chopped shallots, herbs, and feta if using. Gently mix. Serve cold or at room temperature.
Options
Lemon juice can also replace vinegar or use 1 tablespoon of each juice and vinegar.
