Also known as Texas caviar, black eyed peas are tossed with beans, peppers, onions and a tangy vinaigrette to make for an unbeatable salad perfect scooped with tortilla chips! Be sure to give it time to chill for maximum flavor!
Ingredients
  • ½ cup chopped sweet or red onion
  • 1 green bell pepper, chopped
  • 1 bunch green onions, chopped
  • 2 jalapeño peppers, seeded and minced
  • 1 tablespoon minced garlic
  • 1 cup chopped Roma tomato
  • 1 (15 ounces) can black beans, drained
  • 1 (15 ounces) can black-eyed peas, drained
  • 1 cup corn kernels (fresh, canned and drained, or frozen and thawed)
  • ½ teaspoon ground cumin
  • 1 cup of your favorite Italian dressing
  • 1 bunch fresh cilantro, chopped
  • 118.29ml chopped sweet or red onion

  • 12.78g minced garlic
  • 236.59ml chopped Roma tomato
  • 1 (425.24g) can black beans, drained
  • 1 (425.24g) can black-eyed peas, drained
  • 236.59ml corn kernels (fresh, canned and drained, or frozen and thawed)
  • 2.13g ground cumin
  • 236.59ml of your favorite Italian dressing
  • 1 bunch fresh cilantro, chopped

Preparation
STEP 1

In a large bowl mix chopped onion, bell pepper, green onions, jalapeño, tomato, black beans, black-eyed peas, corn, cumin and dressing. Chill in refrigerator for at least 2 hours, or as long as overnight.

STEP 2

Toss in cilantro and serve with tortilla chips.
