- ½ cup shelled roasted pistachios
- ½ cup extra-virgin olive oil
- ⅓ cup lime juice
- Salt and pepper to taste

Inspired by its traditional counterpart, this versatile pesto has big flavor from peppery arugula and tart lime. Try it on steak, roasted vegetables and soft-ripened cheese.
Preparation
STEP 1
Place arugula, pistachios, olive oil and lime juice in a food processor.
STEP 2
Process until smooth, about 2 minutes.
STEP 3
Season to taste with salt and freshly ground pepper.
