- 1 (3-4 pound) boneless pork shoulder
- 1 ½ teaspoons kosher salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Oil
- 1 large onion (red or yellow), sliced
- 2 tablespoons Dijon mustard (regular or whole grain)
- 2 cups apple cider (fresh if available)
- 1 cup chicken broth
- 1 teaspoon chopped fresh rosemary
- 1 tablespoon fresh thyme leaves
- 10 garlic cloves, peeled
- 3 apples, peeled, cored and wedged
- 1 tablespoon apple cider vinegar

As the seasons change, and cooler nights are upon us comfort food cravings really begin! Answer that calling with this awesome braised pork. It will fill your home with the most inviting aroma! Perfect for the family or a house full of friends, and as a way of utilizing fall’s glorious apple bounty!
Preheat oven to 325°F.
Cut pork shoulder into 6-8 large pieces. Mix salt, pepper, garlic powder, and onion powder together. Season pork all over with spice mixture.
Heat a large Dutch oven to medium-high heat. Coat with oil.
Sear seasoned pork pieces on all sides until nicely browned. About 5 minutes per side.
To the pot add sliced onion, Dijon mustard, chicken broth, apple cider, rosemary, thyme, and garlic cloves. Mix until everything is well dispersed.
Cover pot and transfer to oven. Braise for 2 hours.
Carefully remove pot from oven. Rotate pork and add apple wedges. Return to oven and cook for another 1 hour. When done, pork should be very tender and apples soft. Add apple cider vinegar and season to taste.
Delicious served with mashed potatoes and a kale salad with apples, candied nuts and goat cheese. Or, to please the kids (or your kid at heart) it’s also super yummy with homemade mac and cheese!
You can substitute boneless pork country ribs for this recipe. No cutting required!
Substitute with a good quality unfiltered apple juice if apple cider is unavailable.
