The dressing in this salad is as stunning as it is easy to make. Such a great use of fresh cranberries and fall flavors.
Ingredients
  • ¼ cup fresh cranberries
  • 3 tablespoons balsamic vinegar
  • ½ cup chopped red onion
  • 1 tablespoon honey
  • 1 tablespoon Dijon or whole grain mustard
  • ½ cup oil
  • Salt and pepper to taste
  • 6 cups baby kale, spinach or romaine
  • 2 chopped apples
  • ½ cup chopped walnuts, toasted and cooled
  • 59.15ml fresh cranberries
  • 38.34g balsamic vinegar
  • 118.29ml chopped red onion
  • 12.78g honey
  • 12.78g Dijon or whole grain mustard
  • 118.29ml oil
  • Salt and pepper to taste
  • 1419.53ml baby kale, spinach or romaine
  • 2 chopped apples
  • 118.29ml chopped walnuts, toasted and cooled

Preparation
STEP 1

In a food processor or blender combine cranberries, vinegar, onion, honey and mustard. Process until almost pureed, but still slightly chunky. With the machine running, slowly add oil and process until well combined. Season to taste with salt and pepper.

STEP 2

In a salad bowl, toss together kale and apples. Dress with vinaigrette to taste (you may have extra dressing).

STEP 3

Garnish with walnuts just before serving.

Options

Try adding crumbled blue cheese or goat cheese.
