The taste of summer in each bite – this fun take on Gazpacho will warm your soul without warming up your kitchen!
Ingredients
  • 1 small watermelon, diced (approximately 5 cups)
  • 1 cucumber, seeded, peeled and diced
  • 1 yellow bell pepper, diced
  • 1 jalapeno, seeded and diced
  • ½ small red onion, diced
  • ¼ cup minced mint
  • 3 tablespoons fresh-squeezed lime juice
  • 2 tablespoons red wine vinegar
  • Salt to taste
  • Crème fraiche for garnish, optional
  • Zest of one lime for garnish
  • 1 small watermelon, diced (approximately 5 cups)
  • 1 cucumber, seeded, peeled and diced
  • 1 yellow bell pepper, diced
  • 1 jalapeno, seeded and diced
  • 0.5 small red onion, diced
  • 59.15ml minced mint
  • 38.34g fresh-squeezed lime juice
  • 25.56g red wine vinegar
  • Salt to taste
  • Crème fraiche for garnish, optional
  • Zest of one lime for garnish

Preparation
STEP 1

Puree 3/4 of the watermelon pieces.

STEP 2

Add the puree and all remaining ingredients, including the rest of the diced watermelon, into a large bowl. Chill for at least one hour or overnight.

STEP 3

Portion into small bowls or glasses, and top each with a bit of the crème fraiche and lime zest.
