Tomatillo Avocado Salsa

Ingredients
- 6 tomatillos, husks removed, washed in warm water, and halved
- ½ cup chopped white onion
- 1 clove garlic, peeled
- 1 serrano chile, halved and seeded
- ½ bunch fresh cilantro, washed and towel dried
- 2 tablespoons lime juice
- 1 avocado, peeled, seeded and quartered
- Salt and pepper to taste

- 118.29ml chopped white onion
- 1 clove garlic, peeled
- 1 serrano chile, halved and seeded
- 0.5 bunch fresh cilantro, washed and towel dried
- 25.56g lime juice
- 1 avocado, peeled, seeded and quartered
- Salt and pepper to taste
Tomatillos resemble green tomatoes but are actually a husk tomato or ground cherry in the gooseberry family. In this salsa we keep them raw to capture their tart, fruity, herbal flavor.
Preparation
STEP 1
Place tomatillos, onion, garlic, serrano chile, cilantro and lime juice in a food processor. Process until smooth.
STEP 2
Add avocado and pulse a few times, so it is still chunky. Season with salt and pepper.
Options
Serve with carnitas, any favorite taco, over fish, on a slider, with quesadillas, or as dip for tortilla chips.
