Tahini Sauce

- ½ cup tahini
- ¼ cup lemon juice
- 2 cloves garlic
- ½ teaspoon sea salt
- Pinch of cumin, optional
- ¼ cup ice water (more if needed)

Tahini, made from ground sesame seeds, combine with a few simple ingredients to create this luscious Middle Eastern sauce that can be enjoyed on a countless number of dishes.
Combine tahini, lemon juice, garlic, sea salt, and cumin (if using) into food processor and blend.
Scrape down sides, and then while running add ice water. Continue adding until you reach your desired consistency. The tahini will seize up at first but keep mixing and adding water. Suddenly it will transform to be light and smooth.
Taste and adjust seasoning if needed. Serve as a dip with falafel, pita, or veggies. As a salad dressing, or as a sauce for meat, fish, roasted vegetables, or grains.
For a green version add 1-2 tablespoon of chopped parsley to the food processor.
This recipe can also be made by simply using a whisk, just be sure to grate the garlic first.
To mellow the garlic flavor, soak grated garlic in lemon juice for 5 minutes before blending with tahini, salt, and water.
