A great dish when you want a salad but something a bit different – beans give this recipe heartiness while the freshness and spice delight your senses.
Ingredients
  • 1 (10 ounces) package frozen shelled edamame, thawed
  • 1 (15 ounces) can black beans, drained and rinsed
  • 1 (15 ounces) can black-eyed peas, drained and rinsed
  • ½ cup chopped red onion
  • 2 cups thinly sliced celery
  • 1 jalapeño pepper, seeded and minced (or to taste)
  • Dressing:
  • ¼ cup oil (olive, avocado and rice bran all work well)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ¼ cup fresh lime juice
  • ½ cup chopped fresh cilantro
  • 1 teaspoon finely chopped garlic
  • 1 teaspoon honey
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 (283.5g) package frozen shelled edamame, thawed
  • 1 (425.24g) can black beans, drained and rinsed
  • 1 (425.24g) can black-eyed peas, drained and rinsed
  • 118.29ml chopped red onion
  • 473.18ml thinly sliced celery
  • 1 jalapeño pepper, seeded and minced (or to taste)
  • Dressing:
  • 59.15ml oil (olive, avocado and rice bran all work well)
  • 4.26g ground cumin
  • 4.26g chili powder
  • 59.15ml fresh lime juice
  • 118.29ml chopped fresh cilantro
  • 4.26g finely chopped garlic
  • 4.26g honey
  • 2.13g salt
  • 1.07g black pepper

Preparation
STEP 1

Mix together the edamame, black beans, black-eyed peas, red onion, celery and jalapeño. Place in a medium bowl.

STEP 2

Whisk together the dressing ingredients and add to the vegetable mixture. Chill before serving.
