Pickled Red Onions

Ingredients
- 1 large red onion, thinly sliced
- 1 clove of garlic, peeled (optional)
- 1 teaspoon black peppercorns (optional)
- 1 bay leaf (optional)
- ½ cup white distilled vinegar
- 1 tablespoon granulated sugar
- 1 teaspoon salt
- Boiling water

- 118.29ml white distilled vinegar
- 12.78g granulated sugar
- 4.26g salt

Pickled onions are easy to make and incredibly delicious. They give this amazing sweet, spicy, tangy flavor to so many dishes. Add them to almost anything... all tacos, pulled pork, black beans and rice, scrambled eggs, burgers, sandwiches, wraps, salads, the list goes on and on. Prefer them on the sweeter side, add more sugar. Want a little more spice, add sliced jalapeno. You will never want your fridge without a jar.
Preparation
STEP 1
Add sliced onion into a jar. Pint size works best.
STEP 2
Add garlic, peppercorns, and bay leaf if using.
STEP 3
Add vinegar, sugar, and salt.
STEP 4
Pour boiling water into jar to fill. Cover with lid and mix to evenly distribute seasonings and dissolve sugar and salt.
STEP 5
Let jar sit at room temperature for an hour to marinate and pickle. Use right away or store in refrigerator for up to a week.
