Calling all mushroom lovers! This sophisticated yet simple ramen is quick, comforting, and full of mushroom flavor. May take a little longer to make than the ramen of our youth, but it’s oh so satisfying.
Ingredients
  • Cooking oil
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 4 green onions, sliced, white and green parts separated
  • 12 ounces mixed mushrooms, sliced (button, oyster, shitake, maitake, bunashimeji, enoki, etc.)
  • 1 teaspoon toasted sesame oil
  • 8 cups mushroom broth
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 4 packs instant ramen noodles
  • 4 soft cooked eggs
  • Optional Toppings:
  • Thinly sliced carrots
  • Baby bok choy
  • Bean sprouts
  • Sliced fresh chile
  • Toasted sesame seeds
  • Chile sauce
  • Crunchy garlic
  • Cooking oil

  • 4.26g toasted sesame oil
  • 1892.71ml mushroom broth
  • 12.78g soy sauce
  • 12.78g rice vinegar
  • 4 packs instant ramen noodles
  • 4 soft cooked eggs
  • Optional Toppings:
  • Thinly sliced carrots
  • Baby bok choy
  • Bean sprouts
  • Sliced fresh chile
  • Toasted sesame seeds
  • Chile sauce
  • Crunchy garlic

Calling all mushroom lovers! This sophisticated yet simple ramen is quick, comforting, and full of mushroom flavor. May take a little longer to make than the ramen of our youth, but it’s oh so satisfying.

Preparation
STEP 1

Heat a medium sized pot coated with cooking oil to medium heat.

STEP 2

Add minced garlic, ginger, and the white parts of green onion. Stir fry until fragrant. About 1-2 minutes.

STEP 3

Increase heat to medium-high and add mushrooms. Stir fry until lightly tender and browned. Season with sesame oil, salt, and pepper. Set aside half the mushrooms for garnish. (Some more delicate mushrooms may be best kept for the end).

STEP 4

To same pot add broth and bring to a boil. Add soy sauce and rice vinegar. Cook ramen noodles in broth per package instructions. Add carrots and baby bok choy if using and cook until tender. About 2 minutes.

STEP 5

Divide mushroom broth, cooked vegetables and noodles amongst bowls. Add mushrooms, soft boiled egg, remaining green onion, and toppings of choice. Serve and enjoy!
