Melon and Blueberry Salad with Honey

Ingredients
- 3 pounds melon, peeled and seeded, cut into chunks (cantaloupe, honeydew, or other specialty variety)
- 2 cups fresh blueberries
- 2 cups jicama, cut into matchstick julienne
- ¼ cup chopped fresh mint, plus extra leaves to garnish
- ½ cup good-quality honey
- ¼ cup freshly squeezed lime juice
- Pinch of cinnamon

- 473.18ml fresh blueberries
- 473.18ml jicama, cut into matchstick julienne
- 59.15ml chopped fresh mint, plus extra leaves to garnish
- 118.29ml good-quality honey
- 59.15ml freshly squeezed lime juice
- Pinch of cinnamon
This super simple summer salad makes for a refreshing first course, side dish or even dessert.
Preparation
STEP 1
In a large salad bowl, gently toss together chunked melon, blueberries, jicama and mint.
STEP 2
In a small bowl, mix honey, lime juice and cinnamon and pour over fruit. Gently fold dressing into salad, taking care not to bruise blueberries. Garnish with mint leaves.
