Kafta in Lebanon, or Kofta in other Middle Eastern countries is an oblong shaped meatball made from ground beef, onion, parsley and spices. It is often formed around a skewer for easy grilling and served with hummus and pita.
Ingredients
  • 1 pound ground beef
  • ⅓ cup grated onion
  • 1 garlic clove, grated
  • ⅓ cup chopped fresh parsley
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon allspice
  • ½ teaspoon cumin
  • ½ teaspoon coriander
  • ¼ teaspoon cinnamon
  • 453.59g ground beef
  • 78.86ml grated onion
  • 1 garlic clove, grated
  • 78.86ml chopped fresh parsley
  • 4.26g kosher salt
  • 2.13g ground black pepper
  • 1.07g allspice
  • 2.13g cumin
  • 2.13g coriander
  • 1.07g cinnamon

Preparation
STEP 1

In a medium bowl mix together ground beef, grated onion, grated garlic, chopped parsley, salt, pepper, and spices. (Clean hands are your best tool).

STEP 2

Shape meat mixture into kafta by forming into oblong shapes about 1 inch thick. They can be left free formed or shaped around a skewer.

STEP 3

Preheat a grill to medium-high heat. Lightly oil grates. Cook kafta for 4-5 minutes per side until nicely browned and cooked to your preferred level of doneness. Serve hot off the grill with your sides of choice.

Options

The food processor is a great tool for mincing the onion, garlic, and parsley.

Kafta can also be made using ground lamb, turkey, chicken, or a combination thereof.

Some suggested pairings would include hummus, pita, rice pilaf, tomato and cucumber salad, tabbouleh, olives, Feta cheese, tahini sauce, or Tzatziki.
