Ingredients
- 2 cups frozen peas, thawed and divided
- 1 cup basil leaves
- 1 cup mint leaves
- ½ cup toasted walnuts or pecans
- ½ cup grated Parmesan cheese
- 3 cloves garlic
- ½ teaspoon red pepper flakes
- ½ cup olive oil
- ¼ cup lemon juice
- Salt and pepper to taste
- 473.18ml frozen peas, thawed and divided
- 236.59ml basil leaves
- 236.59ml mint leaves
- 118.29ml toasted walnuts or pecans
- 118.29ml grated Parmesan cheese
- 3 cloves garlic
- 2.13g red pepper flakes
- 118.29ml olive oil
- 59.15ml lemon juice
- Salt and pepper to taste
Pesto gets a springtime twist with sweet peas and fragrant herbs. Move over winter, we are ready for light and bright and this pesto is here to deliver.
Preparation
STEP 1
In a blender or food processor, combine 1 1/2 cup peas with basil, mint, nuts, cheese, garlic and red pepper flakes. Blend until combined.
STEP 2
With the blender/processor still running slowly stream in the olive oil until mixture is smooth.
STEP 3
Add lemon juice. Season to taste with salt and pepper. Stir in remaining 1/2 cup peas.
Options
Can be tossed with hot or cold pasta or served on toasted or grilled bread.
