Preparation
STEP 1
Prep cucumbers using your preferred style: lightly smashed into bite-sized pieces, thinly sliced rounds, or hasselback (longer sections thinly sliced without cutting all the way through). Place in a colander, toss with salt, and let sit for 15–20 minutes. Rinse briefly and pat dry.
STEP 2
In a medium bowl, whisk together soy sauce, rice vinegar, chili garlic sauce, honey, and sesame oil until well combined.
STEP 3
Add cucumbers and toss to coat. Finish with sesame seeds and green onions. Serve immediately or chill briefly before serving.
Options
Add a splash of lime juice for extra brightness.
Toss in crushed peanuts or cashews for crunch.
For added heat, sprinkle in dried chili flakes (such as gochugaru) or drizzle with chili oil or chili crunch.
