  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon chili garlic sauce, to taste
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 tablespoon toasted sesame seeds
  • 2 green onions, thinly sliced
  • 5-6 Persian or 2 English cucumbers
  • 6.39g salt
  • 25.56g soy sauce or tamari
  • 25.56g rice vinegar
  • 12.78g chili garlic sauce, to taste
  • 12.78g honey
  • 4.26g sesame oil
  • 12.78g toasted sesame seeds
  • 2 green onions, thinly sliced

Preparation
STEP 1

Prep cucumbers using your preferred style: lightly smashed into bite-sized pieces, thinly sliced rounds, or hasselback (longer sections thinly sliced without cutting all the way through). Place in a colander, toss with salt, and let sit for 15–20 minutes. Rinse briefly and pat dry.

STEP 2

In a medium bowl, whisk together soy sauce, rice vinegar, chili garlic sauce, honey, and sesame oil until well combined.

STEP 3

Add cucumbers and toss to coat. Finish with sesame seeds and green onions. Serve immediately or chill briefly before serving.
