Add depth of flavor to roasted meat dishes and give simple crackers some pizazz with rich, sweet spices.
Ingredients
  • 1 tablespoon butter
  • 2 medium shallots, minced
  • 3 ripe but firm pears, peeled, cored and diced
  • ¼ cup currants
  • ¼ cup sugar
  • 2 tablespoons apple cider vinegar
  • ¾ cup hard pear cider (or substitute white wine)
  • ½ teaspoon cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground allspice
  • ¼ teaspoon ground nutmeg
  • Salt and freshly ground black pepper
  • 12.78g butter
  • 2 medium shallots, minced
  • 3 ripe but firm pears, peeled, cored and diced
  • 59.15ml currants
  • 59.15ml sugar
  • 25.56g apple cider vinegar
  • 177.44ml hard pear cider (or substitute white wine)
  • 2.13g cinnamon
  • 1.07g ground cloves
  • 1.07g ground allspice
  • 1.07g ground nutmeg
  • Salt and freshly ground black pepper

Preparation
STEP 1

Melt butter in a medium saucepan over medium-high heat. When foam subsides, add shallots and sauté just until tender. Add remaining ingredients and season to taste with salt and pepper.

STEP 2

Bring to a boil, then reduce heat and simmer for about 10 minutes, or until pears are tender but not falling apart. Serve warm.

Options

Great with roasted turkey, ham, pork or simply with cheese and crackers.
