Ingredients
- ½ (5 pound) baby seedless watermelon
- Olive oil
- 1 (7 ounces) block feta, cubed
- ½ cup thinly sliced red onion
- 2 tablespoons thinly sliced fresh mint
- 2 tablespoons fresh lime juice
- 2 tablespoons olive oil
- Salt to taste
- dash of Aleppo cayenne pepper
- 0.5 (5 pound) baby seedless watermelon
- Olive oil
- 1 (198.45g) block feta, cubed
- 118.29ml thinly sliced red onion
- 25.56g thinly sliced fresh mint
- 25.56g fresh lime juice
- 25.56g olive oil
- Salt to taste
- dash of Aleppo cayenne pepper
Grilling watermelon adds a delightful, charred flavor to this salad that highlights the sweetness of your seasonal watermelon. It can be served right off the grill or chilled.
Preparation
STEP 1
Heat grill to medium-high heat. Cut watermelon into 1-inch rounds leaving rind on. Lightly brush with olive oil. Cook until melon is well marked with grill lines.
STEP 2
Remove rind and cut watermelon into desired sized cubes.
STEP 3
In a large bowl or platter add grilled watermelon, feta, red onion, and mint.
STEP 4
In a small bowl mix together lime juice, olive oil, and salt. Drizzle over salad. Top with Aleppo or cayenne if using.
Options
You can serve this salad over a bed of arugula, add cubed cucumber, a sprinkle of toasted pine nuts, or a drizzle of balsamic glaze.
