Green Beans with Bacon and Almonds

- 1 pound green beans, ends trimmed
- 4 slices bacon
- ¼ cup shallots, chopped
- 8 ounces sliced mushrooms, optional
- 1 clove garlic, minced
- ¼ cup red wine vinegar
- 1 tablespoon sugar
- 2 teaspoons Dijon mustard
- ½ cup sliced almonds
- Salt and pepper
- 453.59g green beans, ends trimmed
- 4 slices bacon
- 59.15ml shallots, chopped
- 226.8g sliced mushrooms, optional
- 1 clove garlic, minced
- 59.15ml red wine vinegar
- 12.78g sugar
- 8.52g Dijon mustard
- 118.29ml sliced almonds
- Salt and pepper
Surprise your guests with green beans full of flavor with delicious bits of bacon, garlic and almonds.
In a small bowl, combine vinegar, sugar, and mustard to dissolve the sugar, and set aside.
In a large sauté pan over medium-high heat, cook the bacon until crisp. Remove from pan to a paper towel-lined plate to cool and drain.
Drain all but 2 tablespoons of fat from the pan. Return the pan to medium heat and add the shallots. Cook 3 minutes or until tender.
Add the garlic and mushrooms, if using, and cook for 2 minutes.
Add the almonds and cook an additional 3 minutes.
Add the beans, pour in the vinegar mixture and, using tongs, toss everything together. Cover and cook 4 minutes, or until the beans are just tender (they should still be bright green).
Crumble in bacon and toss to combine. Pour onto a serving platter, topping the beans with all the bits from the bottom of the pan.
