Ingredients
- 2 red beets
- 2 cups vanilla almond milk
- 2 cups sliced strawberries (or berries of choice)
- 1 orange, juiced
- 2 red beets

- 1 orange, juiced

Preparation
STEP 1
To steam the beets: scrub beets clean, leaving root end intact and removing all but one inch of stalk. This will help minimize color bleeding. Reserve beet greens for another use. Place steamer basket in pot and steam until beets are tender, approximately 30-40 minutes.
STEP 2
When done, plunge beets into cold water. When cool, peel the beets (the peel should easily release), and dice.
STEP 3
Combine all ingredients in blender and puree until well combined.
Options
For an added protein or probiotic boost, try adding Greek yogurt, Kefir, pea protein powder or chia seeds.
