Ingredients
- 1 (4 pounds) pork shoulder roast (boneless or bone-in)
- Salt and pepper
- Honey Mustard Sauce:
- ¾ cup honey
- ⅓ cup Dijon mustard
- ⅓ cup stone ground mustard
- ¼ cup apple cider vinegar
- ¼ cup prepared horseradish
- ½ bunch tarragon, chopped (about 1/4 cup)
- 1 (1814.37g) pork shoulder roast (boneless or bone-in)
- Salt and pepper
- Honey Mustard Sauce:
- 177.44ml honey
- 78.86ml Dijon mustard
- 78.86ml stone ground mustard
- 59.15ml apple cider vinegar
- 59.15ml prepared horseradish
- 0.5 bunch tarragon, chopped (about 1/4 cup)

Preparation
STEP 1
Preheat oven to 325°F.
STEP 2
Season pork well with salt and pepper. Place in a roasting pan and cover with foil. Bake for about 4 hours until meat becomes fork tender.
STEP 3
While pork is cooking make sauce by combining honey, Dijon mustard, stone ground mustard, vinegar, horseradish, and tarragon in a bowl. Set aside.
STEP 4
Remove pork from oven and carefully shred or slice. Serve with honey mustard sauce.
