This sensible breakfast is great for meal prep during busy weeks. Nourishes the body in the morning and can treat it with a snack in the afternoon.
Ingredients
  • 2 ½ cups old fashioned rolled oats
  • 1 tablespoon chia seeds
  • 1 tablespoon hemp seeds
  • ½ teaspoon sea salt
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 banana, mashed
  • 2 eggs (or flax egg)
  • ¼ cup maple syrup or honey (increase to 1/3 cup if prefer sweeter)
  • 1 ½ cups milk of choice (dairy, plant based, or kefir)
  • ¼ cup almond butter
  • 2 teaspoons vanilla extract
  • ¼ cup coconut oil, melted (or butter)
  • 1 ½ cups blueberries (fresh or frozen)
  • ¼ cup sliced almonds (optional)
  • 591.47ml old fashioned rolled oats

  • 4.26g cinnamon
  • 1.07g nutmeg
  • 1 banana, mashed

  • 59.15ml maple syrup or honey (increase to 1/3 cup if prefer sweeter)
  • 354.88ml milk of choice (dairy, plant based, or kefir)
  • 59.15ml almond butter
  • 8.52g vanilla extract
  • 59.15ml coconut oil, melted (or butter)
  • 354.88ml blueberries (fresh or frozen)
  • 59.15ml sliced almonds (optional)

Preparation
STEP 1

Preheat oven to 375°F. Coat a square baking dish with pan spray.

STEP 2

In a large bowl combine oats, both seeds, salt, and spices.

STEP 3

In a medium bowl combine banana, eggs, maple syrup, milk, almond butter, vanilla, and coconut oil.

STEP 4

Add wet ingredients to the dry and mix to combine. Add blueberries and gently mix until dispersed.

STEP 5

Transfer oatmeal to prepared baking dish and top with sliced almonds if using. Bake for 35-40 minutes or until center is set. Best eaten warm but can also be served cooled.

Options

Baked oatmeal can be served with a spoon of yogurt on top.

This baked oatmeal can be made with a variety of ingredients. Try peanut butter or raspberries. Add a ½ cup of chopped nuts such as walnuts or pecans.
