Cleaning fresh artichokes for the heart takes time, but the flavor and texture is worth the reward. Don’t waste the removed leaves, they can be steamed and enjoyed another time.
Ingredients
  • 3 tablespoons extra-virgin olive oil
  • 1 small red onion, minced
  • 1 ½ ounces very thinly sliced prosciutto, cut into thin strips (about 2 slices)
  • 2 cups fresh artichoke hearts, thinly sliced (about 4 artichokes)
  • 1 (10 ounces) package frozen peas
  • 2 teaspoons finely chopped fresh mint
  • 38.34g extra-virgin olive oil
  • 1 small red onion, minced
  • 42.52g very thinly sliced prosciutto, cut into thin strips (about 2 slices)
  • 473.18ml fresh artichoke hearts, thinly sliced (about 4 artichokes)
  • 1 (283.5g) package frozen peas
  • 8.52g finely chopped fresh mint

Preparation
STEP 1

Heat oil in a skillet over medium heat. Add onion and cook until soft, about 10 minutes.

STEP 2

Add prosciutto and artichokes and season with salt and pepper. Stir fry until prosciutto is crispy and artichokes are tender.

STEP 3

Add peas and stir fry for 2 minutes.

STEP 4

Remove from heat and stir in mint.

Options

While prepping your artichoke hearts have a bowl of cold water with lots of fresh lemon to place the completed hearts in while you work so they don’t brown.
