Delicata squash is delightful for its wonderful flavor and edible thin skin (no peeling!). Use Our Own Italian Sausage from our meat market for optimal flavor.
Ingredients
  • 1 ½ pounds hot Italian sausage (bulk or removed from casings)
  • ½ cup chopped onion (about half an onion)
  • ½ cup chopped red pepper (about half a pepper)
  • 1 cup garlic crostini or garlic croutons, crushed
  • ½ cup whole-berry cranberry sauce
  • 2 large eggs
  • 4 cups grated fontina cheese, divided
  • 3 delicata squash
  • 680.39g hot Italian sausage (bulk or removed from casings)
  • 118.29ml chopped onion (about half an onion)
  • 118.29ml chopped red pepper (about half a pepper)
  • 236.59ml garlic crostini or garlic croutons, crushed
  • 118.29ml whole-berry cranberry sauce
  • 2 large eggs
  • 946.35ml grated fontina cheese, divided
  • 3 delicata squash

Preparation
STEP 1

Preheat oven to 375°F. In a large sauté pan over medium heat, brown sausage until cooked through. Remove from pan and set aside in a medium bowl to cool.

STEP 2

Add onion and pepper to the pan and cook for about 10 minutes, until lightly browned and caramelized. Add cooked peppers and onions to bowl with sausage, along with crushed croutons.

STEP 3

In a separate bowl, whisk eggs and cranberry sauce until combined. Add to sausage mixture and stir to coat everything. Add 2 cups of cheese and mix to combine.

STEP 4

Slice squash in half lengthwise and scrape out seeds. Divide stuffing mixture between squash halves, packing it in. Place on a sheet pan, loosely cover with foil and bake for 1 hour.

STEP 5

Remove from oven and carefully sprinkle remaining cheese over each squash. Return to oven and bake for 10 minutes more.

Options

Many different cheeses would work with this recipe such as Gruyere, Swiss, Cheddar, Parmesan or a combination.
