Delicata squash is delightful for its wonderful flavor and edible thin skin - no peeling! Pair with Our Own Italian Sausage for a savory experience.
Ingredients
  • 1 ½ pounds hot Italian sausage (bulk or removed from casings)
  • ½ cup chopped onion (about half an onion)
  • ½ cup chopped apple
  • 1 cup garlic crostini or croutons, crushed
  • ⅓ cup chopped pecans
  • ½ cup whole-berry cranberry sauce
  • 2 large eggs
  • 3 cups shredded cheese, divided (cheddar, gouda, fontina, gruyere, or swiss)
  • 3 delicata squash
  • 680.39g hot Italian sausage (bulk or removed from casings)
  • 118.29ml chopped onion (about half an onion)
  • 118.29ml chopped apple
  • 236.59ml garlic crostini or croutons, crushed
  • 78.86ml chopped pecans
  • 118.29ml whole-berry cranberry sauce
  • 2 large eggs
  • 709.76ml shredded cheese, divided (cheddar, gouda, fontina, gruyere, or swiss)

Preparation
STEP 1

Preheat oven to 375°F.

STEP 2

In a large sauté pan over medium heat cook sausage and onions until browned and caramelized. About 10 minutes. Add apples and cook an additional 2 minutes.

STEP 3

Transfer mixture into a large bowl with chopped pecans and crushed croutons. In a separate bowl, whisk eggs and cranberry sauce until combined. Add to sausage mixture and stir to coat everything. Add 2 cups of cheese and mix to combine.

STEP 4

Slice squash in half lengthwise and scrape out seeds. Divide stuffing mixture between squash halves, packing it in. Place on a sheet pan, loosely cover with foil and bake for 1 hour.

STEP 5

Remove from oven and carefully sprinkle remaining cheese over each squash. Return to oven and bake for 10 minutes more.
