Make your own dumplings at home with this simple recipe that can be both steamed or panfried.

Preparation
STEP 1

Combine ground meat, ginger, garlic, water chestnuts, soy sauce, oyster sauce sesame oil, black pepper and sugar. Give it a good mix until everything comes together to form a smooth paste. Refrigerate until ready to use.

STEP 2

Prepare a small bowl of water. Wet the edge of a dumpling wrapper with your finger or pastry brush. Scoop about 1 tablespoon of filling and place it in the center of the wrapper. Hold the dumpling with one hand and start sealing the edges with the other. After folding, press the edges again to seal well. You can use any method or style to fold the dumplings as long as you’re comfortable with it. Cover the dumpling wrappers and wrapped dumplings with damp paper towels to prevent them from drying out while you’re working.

STEP 3

Place the dumplings into a steamer and steam for 12-15 minutes depending on their size.

Options

For Potstickers: Heat 1 tablespoon of oil in a nonstick skillet over medium heat. Add the dumplings in a single layer. Add 2 tablespoons of water and cover. Steam until the dumplings are cooked through, about 3 to 4 minutes. Uncover and keep cooking until the bottom side turns golden brown.

If using frozen dumplings, cook the covered dumplings for 3 to 4 minutes longer before uncovering the pan and browning.

Freeze dumplings in single layer before transferring to a resealable bag. Store in the freezer for up to 1 month.
