Pineapple Cucumber Salad

Ingredients
- 1 pineapple
- 2 English cucumbers
- ¼ cup chopped cilantro
- ¼ cup thinly sliced red onion
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 lime

Cool, light and refreshing, the pineapple and cucumber really shine here, especially on a hot summer day!
Preparation
STEP 1
Slice off the bottom off your pineapple. Hold onto the top as you slice off the peel with a sharp knife going downwards towards your cutting board. Lay the pineapple on its side, cut off the top and any remaining eyes.
STEP 2
Cut the pineapple in half lengthwise, cut each half in half again and trim out the core. Cut each quarter into bite size pieces and place into a large bowl.
STEP 3
Half peel your cucumbers, slice off the ends and cut into ¼ inch thick rounds. Add to bowl
STEP 4
Add both bell peppers, red onion and cilantro to bowl.
STEP 5
Mix everything together, squeeze lime over salad and chill in refrigerator for 20 minutes before serving.
