- Toasted unsweetened coconut for garnish

- 236.59ml cooked rice
- 236.59ml diced pineapple (fresh or canned)
- 118.29ml diced candied ginger, divided
- 8.52g matcha (green tea powder)
- 2.13g salt
- 78.86ml sugar
- 2.13g vanilla
- Toasted unsweetened coconut for garnish
Sweet with a smooth texture, creamy coconut milk creates a heavenly background for the matcha. Add even more flavor by garnishing with fresh seasonal fruit.
Preparation
STEP 1
In a medium saucepan, combine the coconut milk, rice, pineapple, 1/4 cup of the ginger, matcha, salt and sugar. Cook and stir over medium heat about 15 minutes or until flavors are combined and mixture thickens.
STEP 2
Add vanilla and simmer one minute. Pour into bowl and garnish with coconut and the remaining candied ginger.
