Marinated Olives and Feta

Dare you to try and eat just one! These easy kicked up olives are perfect to add to any appetizer spread or for a nibble near the drinks.
Ingredients
  • 2 cups pitted Castelvetrano olives
  • ½ cup Marcona almonds
  • 1 block feta cheese (7-8 ounces)
  • 1 clove garlic, smashed
  • ½ lemon, zested
  • ¼ cup extra virgin olive oil
  • ¼ teaspoon red pepper flakes
  • 473.18ml pitted Castelvetrano olives
  • 118.29ml Marcona almonds
  • 1 block feta cheese (7-8 ounces)
  • 1 clove garlic, smashed
  • 0.5 lemon, zested
  • 59.15ml extra virgin olive oil
  • 1.07g red pepper flakes

Dare you to try and eat just one! These easy kicked up olives are perfect to add to any appetizer spread or for a nibble near the drinks.

Preparation
STEP 1

Add olives to a bowl. Stuff one almond into each olive until you use them all up, not all olives will be filled.

STEP 2

Cube feta and add to the bowl of olives. You can stuff some of the remaining olives with feta if you wish.

STEP 3

Add garlic, lemon zest, olive oil, and red pepper flake. Lightly mix to coat and spread flavors. Serve at room temperature.

Options

Rather than raw garlic try adding a ¼ cup of roasted garlic cloves. If you're an herb lover add a teaspoon of minced parsley, thyme, or rosemary.

Toasted bread, pita, or crostini can be served on the side to enjoy with the olives and cheese.
