Ingredients
  • Dressing:
  • ¾ cup freshly squeezed lemon juice
  • 1 tablespoon sauerkraut juice (liquid brine from jar)
  • ½ cup extra-virgin olive oil
  • 1 to 1 1/2-inch knob of fresh ginger, peeled and chopped
  • 2 cloves garlic, minced
  • 1 tablespoon white miso
  • 2 tablespoons honey
  • Salad:
  • 4 cups shredded cabbage (green, purple or mixed)
  • 1 large carrot, peeled and shredded
  • ⅓ cup sauerkraut
  • ½ cup chopped fresh flat-leaf parsley
  • ½ avocado, sliced
  • 2 tablespoons raisins
  • Toasted sunflower seeds
  • Dressing:
  • 177.44ml freshly squeezed lemon juice
  • 12.78g sauerkraut juice (liquid brine from jar)
  • 118.29ml extra-virgin olive oil
  • 1 to 1 1/2-inch knob of fresh ginger, peeled and chopped
  • 2 cloves garlic, minced
  • 12.78g white miso
  • 25.56g honey
  • Salad:
  • 946.35ml shredded cabbage (green, purple or mixed)
  • 1 large carrot, peeled and shredded
  • 78.86ml sauerkraut
  • 118.29ml chopped fresh flat-leaf parsley
  • 0.5 avocado, sliced
  • 25.56g raisins
  • Toasted sunflower seeds

Preparation
STEP 1

For dressing, add lemon juice, sauerkraut juice, olive oil, ginger, garlic, miso and honey into a blender and blend until smooth. Start with about 3/4 of your chopped ginger, and add more ginger to taste, if desired. Set prepared dressing aside.

STEP 2

Toss together the cabbage, carrots, sauerkraut, and parsley in a large bowl with 4-5 tablespoons of dressing. Top with the sliced avocado, raisins and sunflower seeds.
