Ingredients
- Dressing:
- ¾ cup freshly squeezed lemon juice
- 1 tablespoon sauerkraut juice (liquid brine from jar)
- ½ cup extra-virgin olive oil
- 1 to 1 1/2-inch knob of fresh ginger, peeled and chopped
- 2 cloves garlic, minced
- 1 tablespoon white miso
- 2 tablespoons honey
- Salad:
- 4 cups shredded cabbage (green, purple or mixed)
- 1 large carrot, peeled and shredded
- ⅓ cup sauerkraut
- ½ cup chopped fresh flat-leaf parsley
- ½ avocado, sliced
- 2 tablespoons raisins
- Toasted sunflower seeds

- 177.44ml freshly squeezed lemon juice
- 12.78g sauerkraut juice (liquid brine from jar)
- 118.29ml extra-virgin olive oil
- 1 to 1 1/2-inch knob of fresh ginger, peeled and chopped
- 2 cloves garlic, minced
- 12.78g white miso
- 25.56g honey
- Salad:
- 946.35ml shredded cabbage (green, purple or mixed)
- 1 large carrot, peeled and shredded
- 78.86ml sauerkraut
- 118.29ml chopped fresh flat-leaf parsley
- 0.5 avocado, sliced
- 25.56g raisins
- Toasted sunflower seeds

Preparation
STEP 1
For dressing, add lemon juice, sauerkraut juice, olive oil, ginger, garlic, miso and honey into a blender and blend until smooth. Start with about 3/4 of your chopped ginger, and add more ginger to taste, if desired. Set prepared dressing aside.
STEP 2
Toss together the cabbage, carrots, sauerkraut, and parsley in a large bowl with 4-5 tablespoons of dressing. Top with the sliced avocado, raisins and sunflower seeds.
