Iced Champagne Mignonette

Ingredients
- 1 small shallot, minced
- ⅓ cup red wine vinegar
- ⅓ cup rice wine vinegar
- ¾ cup dry Champagne or other sparkling wine
- ¾ teaspoon lemon zest
- 1 teaspoon cracked black pepper
- 1 teaspoon cracked mixed peppercorns
- 1 small shallot, minced
- 78.86ml red wine vinegar
- 78.86ml rice wine vinegar
- 177.44ml dry Champagne or other sparkling wine
- 3.2g lemon zest
- 4.26g cracked black pepper
- 4.26g cracked mixed peppercorns
With the consistency of a granita, this icy sauce has ample zip to really highlight your briny and creamy oysters. Make ahead of time and store in the freezer until ready to use.
Preparation
STEP 1
Stir together all ingredients and pour into a shallow dish so that liquid is about 1-inch deep. Place in freezer.
STEP 2
Stir with a fork every 30 minutes to achieve consistency of shaved ice. Cover with plastic wrap and store in freezer until ready to serve.
STEP 3
Serve on freshly shucked raw oysters.

Recipe makes enough for about 4 dozen oysters.
