Iced Champagne Mignonette

With the consistency of a granita, this icy sauce has ample zip to really highlight your briny and creamy oysters. Make ahead of time and store in the freezer until ready to use.
Ingredients
  • 1 small shallot, minced
  • ⅓ cup red wine vinegar
  • ⅓ cup rice wine vinegar
  • ¾ cup dry Champagne or other sparkling wine
  • ¾ teaspoon lemon zest
  • 1 teaspoon cracked black pepper
  • 1 teaspoon cracked mixed peppercorns
  • 1 small shallot, minced
  • 78.86ml red wine vinegar
  • 78.86ml rice wine vinegar
  • 177.44ml dry Champagne or other sparkling wine
  • 3.2g lemon zest
  • 4.26g cracked black pepper
  • 4.26g cracked mixed peppercorns

Preparation
STEP 1

Stir together all ingredients and pour into a shallow dish so that liquid is about 1-inch deep. Place in freezer.

STEP 2

Stir with a fork every 30 minutes to achieve consistency of shaved ice. Cover with plastic wrap and store in freezer until ready to serve.

STEP 3

Serve on freshly shucked raw oysters.

Recipe makes enough for about 4 dozen oysters.
