Preparation
STEP 1

To make filling, heat a large skillet to medium-high heat. Coat with oil. Add ground pork, breaking up the meat with a wooden spoon while it cooks. Season with a pinch of salt and pepper.

STEP 2

Once pork is about halfway cooked add onion and garlic. Cook an additional 2-3 minutes.

STEP 3

Add carrots, green onion and cabbage to the pan. Cook until tender, about 2-3 minutes more.

STEP 4

Add black pepper and soy sauce. Taste and adjust seasoning if needed. Remove the filling from pan and set aside to cool. Drain any juice that accumulates.

STEP 5

To build lumpia, place a single lumpia wrapper on a board with the corner facing you. Add about 2 tablespoons of filling along the bottom third of the wrapper. Start rolling the corner up over filling. Give it one full roll, tuck in the corners and roll again. Once there is about 1-inch of wrapper left brush it with water. Finish rolling to seal. Repeat with the remaining lumpia filling and wrappers.

STEP 6

To cook heat 1-2 inches of oil in a cast iron pan or Dutch oven to 350°F. Fry lumpia in batches until golden brown and crisp, about 2 minutes. Serve warm with sweet chili sauce and/or lumpia sauce for dipping.

Options

Lumpia Sauce: ¼ cup soy sauce, 1 tablespoon vinegar (white, Filipino cane, or rice), 1 clove minced garlic. Mix together in a small bowl.
