Make the most of summer's sweetest produce with this grilled fruit salad. Featuring juicy fruit, smoky notes from the grill, and tangy blackberry vinaigrette, this fresh and colorful salad is perfect at home, on a picnic table or paired with grilled chicken, pork, or salmon for dinner.
Ingredients
  • 5–6 cups your favorite greens (spring mix, arugula, or a combination)
  • 2 ears corn, husks removed
  • 3 stone fruits (peaches, nectarines, plums, or a mix), halved and pitted
  • ½ cup pickled red onions
  • 4 ounces goat cheese or feta, crumbled
  • ½ cup T&C blackberry vinaigrette
  • 5–6 cups your favorite greens (spring mix, arugula, or a combination)
  • 2 ears corn, husks removed
  • 3 stone fruits (peaches, nectarines, plums, or a mix), halved and pitted
  • 118.29ml pickled red onions
  • 113.4g goat cheese or feta, crumbled
  • 118.29ml T&C blackberry vinaigrette

Preparation
STEP 1

Preheat a grill or grill pan to medium-high heat.

STEP 2

Lightly oil and season the corn with salt and pepper. Grill, turning occasionally, until lightly charred on all sides, about 8–10 minutes. Remove from the grill and allow to cool enough to handle.

STEP 3

Lightly oil the cut sides of the stone fruit. Grill the fruit cut-side down for 2–3 minutes, or until grill marks appear and the fruit is lightly softened. Remove and let cool slightly.

STEP 4

Slice the grilled stone fruit into wedges and cut the corn kernels from the cob.

STEP 5

Arrange the greens on a large serving platter or divide among individual plates. Top with the grilled stone fruit, corn, pickled red onions, and crumbled goat cheese or feta. Drizzle generously with blackberry vinaigrette just before serving and toss lightly if desired. Serve immediately and enjoy!

Options
  • Use whatever stone fruit you prefer. Peaches, nectarines, apricots, and plums all work well.

  • For added crunch, finish with toasted sliced almonds, pecans, or pistachios.

  • The fruit, corn, and onions can be prepared ahead of time and refrigerated until ready to assemble. Dress the salad just before serving.

  • Our blackberry vinaigrette is a natural match for this salad, but raspberry, champagne, or balsamic vinaigrettes are equally delicious alternatives.
