Ingredients
  • Marinade:
  • ¼ cup olive oil
  • Juice and zest of 1 lime
  • 1 tablespoon honey
  • 1 tablespoon freshly grated ginger
  • 3 cloves garlic, minced
  • 1 ½ pounds halibut, skinned and cut into 1-inch chunks
  • 2 red bell peppers, cut into 1-inch pieces
  • Fresh pineapple, cut into 1-inch chunks
  • Marinade:
  • 59.15ml olive oil
  • Juice and zest of 1 lime
  • 12.78g honey
  • 12.78g freshly grated ginger
  • 3 cloves garlic, minced
  • 680.39g halibut, skinned and cut into 1-inch chunks
  • 2 red bell peppers, cut into 1-inch pieces
  • Fresh pineapple, cut into 1-inch chunks

Preparation
STEP 1

Combine olive oil, lime juice and zest, honey, ginger, and garlic in a large resealable bag. Add fish and marinate for half an hour. If using bamboo skewers, soak them in water for half hour.

STEP 2

Thread marinated fish, bell pepper and pineapple onto skewers.

STEP 3

Place onto hot grill or broil until fish flakes easily, about four minutes per side.

Options

This recipe can also be made using salmon or cod.
