Ingredients
- 1 1 dozen raw oysters, *pre-shucked extra small
- 1 ½ cups semolina
- Frying oil (canola, vegetable, peanut)
- Kosher salt

Preparation
STEP 1
In a heavy bottomed pot, heat frying oil to 350°F.
STEP 2
Line a plate or baking sheet with paper towels.
STEP 3
Pour half of the semolina into a shallow bowl. Place the oysters on top of the semolina, leaving space between them so that they are not touching. Sprinkle the remaining semolina over the oysters, gently roll the oysters in semolina until they are fully covered.
STEP 4
Remove oysters from the semolina. When oil is ready, carefully add oysters to the pot. Fry for about 2 minutes until golden brown and crisp. Remove oysters from oil and place on paper towels to absorb excess oil, season immediately with kosher salt.
