Traditional Filipino comfort food, Sinigang is a sour soup flavored with tamarind and fish sauce. It’s packed with healthy vegetables perfect for warming your body and soul.
Ingredients
  • Neutral oil
  • 2 pounds pork shoulder, chunked (or pork belly, butt or spareribs)
  • Salt and pepper
  • 1 medium yellow onion, chopped
  • 3 Roma tomatoes, chopped
  • 4-5 cups chicken broth or water
  • 2 tablespoons fish sauce
  • 3 tablespoons tamarind paste (more to taste)
  • 1 cup cut long beans or string beans (1-inch pieces)
  • 1 cup sliced peeled daikon radish
  • 3-4 bunches baby bok choy, stem removed and leaves separated
  • Warm white rice for serving

Preparation
STEP 1

Heat a large pot to medium-high heat. Coat with oil. Season pork pieces with salt and pepper. Sear pork until well browned all over. You may need to work in batches to not overcrowd the pan. Remove browned pork onto a plate and set aside.

STEP 2

Add the onion and tomato to the pot. Season with salt. Cook until they start to soften, about 3 minutes.

STEP 3

Add pork and any accumulated juices back to the pot along with the broth or water and fish sauce. Bring to a boil. Cover the pot, reduce heat to low and cook until the pork is tender, about 45 minutes.

STEP 4

Once pork is tender stir tamarind paste into the broth. Taste to check for seasoning. You want to be sure the soup is sour. Add more tamarind if needed.

STEP 5

Increase heat to medium and add the long beans, radish and bok choy to the pot. Cook until tender, about 3 minutes. Taste to check for seasoning. Add more salt, pepper or fish sauce if needed. Serve hot soup over cooked white rice.

Options

Some additions or substitutions can include sliced Asian eggplant, okra, spinach, and shrimp (whole head-on or peeled and de-veined).
