Ingredients
- 1 head butter lettuce
- ½ cup shaved parmesan, divided
- ½ cup Castelvetrano olives
- Favorite vinaigrette, to taste
- 1 cup garlic croutons
- Optional additions:
- ½ cup cherry tomatoes
- ½ cup sliced radishes
- 1 small head radicchio, leaves torn
- ½ cup shredded red cabbage
- ½ cup shaved fennel
- ½ cup peppadew peppers
- ½ cup sliced red onion
- ¼ cup capers

Switch up your salad game with some new textures and flavors. Grinding croutons into crumbs disperses their scrumptious delicate crunch. Perfect for the cooler months.
Preparation
STEP 1
Separate, wash, and dry lettuce leaves, tearing large ones into pieces and add to salad bowl.
STEP 2
Add parmesan, olives and any additional toppings if using. Toss with enough vinaigrette to lightly coat or to your preference.
STEP 3
Chop croutons in a food processor into crumbs. Top salad with remaining shaved parmesan and crouton crumbs. Serve immediately.
Options
Don’t have croutons? Melt 2 tablespoons of butter in a pan. Add a ½ cup of panko breadcrumbs and 1 teaspoon of granulated garlic. Toast until golden brown. Cool and add to salad.
