Rockfish Ceviche

- 1 pound fresh rockfish, skinned and de-boned (or mahi mahi, salmon, sole, halibut)
- ½ red onion, thinly sliced
- 1-2 garlic cloves, finely minced
- 1 serrano chile, seeded, finely minced (or jalapeño)
- ½ cup freshly squeezed lime juice (about 6 limes)
- 2 tablespoons freshly squeezed orange juice, optional
- ½ teaspoon sea salt (or kosher)
- ½ cup cilantro, chopped
- 1 cup cherry tomatoes, halved (or diced tomato)
- 1 cup diced cucumber
- 2 tablespoons olive oil
- 1 avocado, cubed, optional
- Tortilla chips, for serving

Ceviche is a Latin American dish of raw fish, typically served as an appetizer, where fresh citrus juice “cooks” the fish by denaturing the protein making the fish firm and opaque.
Cut fish into chunks about ¾” thick. Add to a bowl.
Add onion, garlic, chile, lime juice, orange juice and salt. Toss to be sure everything is well coated in the juice.
Add cilantro, tomatoes, cucumber and olive oil. Mix again.
Place ceviche into the refrigerator to marinate and let the acid “cook” the fish. The longer it marinates the firmer the fish will get. A visual cue is the fish turning opaque. This will take about 45 minutes to 1 hour. Do not exceed 2 hours or the fish will become rubbery. Give it a stir every 20 minutes or so to see how it's doing.
Add chopped avocado if using. Taste for seasoning and adjust if needed. Serve cold on its own, with tortilla chips (our favorite), on a tostada, or on a bed of lettuce.

For some tropical sweetness try adding 1 cup of chopped mango or pineapple stirred in at the end.
We love the variety of textures, colors and flavors this recipe brings, but if you are a minimalist, try the recipe simply with the fish, onion, chile, cilantro, lime juice and salt.
