In Japanese culture it is tradition to eat mochi on the first day of the new year in hopes of gaining happiness, fortune, and good health. But equally delicious eaten any time!
Ingredients
  • 3 cups sugar
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 1 (16 ounces) box mochiko (Japanese sweet rice flour made from mochi)
  • 1 stick unsalted butter, melted
  • 1 (13 ½ ounces) can coconut milk
  • 2 cups milk
  • 5 large eggs, beaten
  • 1 teaspoon vanilla
  • 709.76ml sugar
  • 12.78g baking powder
  • 2.13g salt
  • 1 (453.59g) box mochiko (Japanese sweet rice flour made from mochi)
  • 1 stick unsalted butter, melted
  • 1 (382.72g) can coconut milk
  • 473.18ml milk
  • 5 large eggs, beaten
  • 4.26g vanilla

Preparation
STEP 1

Preheat oven to 350°F.

STEP 2

In a large bowl, whisk together sugar, baking powder, salt and mochiko.

STEP 3

In a separate bowl, stir together melted butter and coconut milk. Add milk, eggs and vanilla. Stir until well combined.

STEP 4

Add wet ingredients to mochiko mixture and stir until smooth. Pour into a well-buttered 9x13-inch baking dish.

STEP 5

Bake for about one hour, or until a toothpick inserted in the center comes out clean and top is golden brown. Cool to room temperature before serving.
