- 1 (15 ounces) can black beans, rinsed
- 1 cup roasted and salted cashews
- 1 cup panko breadcrumbs
- 1 bunch green onions, white and light green parts, finely chopped
- 2 poblano peppers, diced (or hatch chiles)
- 1 medium sweet onion, diced
- 4 ounces crumbled feta cheese
- 6 cloves garlic, minced
- 3 canned chipotle peppers, finely chopped
- 2 teaspoons chipotle adobo sauce
- 1 egg, whisked
- 1 tablespoon mayonnaise
- 1 teaspoon your favorite hot sauce
- Salt and freshly ground black pepper

- 1 egg, whisked
- 12.78g mayonnaise
- 4.26g your favorite hot sauce

Introducing your new favorite black bean burger! Cashews are the secret word for binding. Mix in some feta and smoked southwest adobo for a new veggie burger to rock your summer cookouts!
Preheat oven to 350°F. Spread black beans on a parchment lined baking sheet. Bake beans in the oven for 15 minutes to cook and dry out.
While the beans are cooked, add the cashews, panko, and scallions to a food processor. Pulse and blend to a crumble. Transfer to large mixing bowl.
In a pan lightly coated with oil, sauté the onions and poblano peppers for 3-4 minutes until translucent. Add the garlic, chipotle, and adobo and cook until aromatic, 1-2 minutes. Add to the mixing bowl and let cool.
Add black beans and feta to the food processor and pulse a few times to make a paste. The black beans should only be slightly chopped. Transfer to your mixing bowl.
Add egg, mayo, hot sauce, salt and pepper. With a spatula or wooden spoon fold everything together until well mixed. With clean hands form 4-6 larger patties or 8-10 small patties.
Cook burgers either on a grill or on the stove in a large flat pan. Coat a pan with neutral oil and cook over medium-high heat flipping only once after making a crust on each side, approximately 5 minutes per side. Serve with your favorite burger toppings or our suggested combo below!
