Preheat oven to 300°F.
Place ham fat side up in a roasting pan with water. Cover with foil and bake for 3 1/2 hours, until internal temperature reaches 130°F.
Trim away all but 1/8 inch of fat and, with a sharp knife, score ham in a diamond pattern. Drain excess fat.
Combine sugar, mustard and bourbon in a small sauce pan. Cook over medium high heat to dissolve sugar and burn off¬ some of the alcohol in the bourbon. Spoon mixture over ham.
Turn heat up to 425°F and bake for 15-20 minutes until glossy glaze has formed. Carve into slices and serve.
Delicious with roasted asparagus and buttermilk biscuits or sweet potatoes and cranberry sauce.
