Utilize fall’s bounty of apples with this delicious, but simple cake. The walnuts give it great texture and the frosting delivers with a little something extra. No apple peeling is necessary, go ahead and leave them on!
Ingredients
  • 2 eggs
  • ½ cup vegetable oil (or similar)
  • 2 cups sugar
  • 1 teaspoon cinnamon
  • 3 large apples, chopped
  • 1 cup chopped walnuts
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon kosher salt
  • Cream Cheese Frosting:
  • ½ cup butter, room temperature
  • 8 ounces cream cheese, room temperature
  • 1 teaspoon vanilla
  • 1 pound powdered sugar (about 4 cups)
  • 2 eggs
  • 118.29ml vegetable oil (or similar)
  • 473.18ml sugar
  • 4.26g cinnamon
  • 3 large apples, chopped
  • 236.59ml chopped walnuts
  • 473.18ml all-purpose flour
  • 8.52g baking soda
  • 4.26g kosher salt
  • Cream Cheese Frosting:
  • 118.29ml butter, room temperature
  • 226.8g cream cheese, room temperature
  • 4.26g vanilla
  • 453.59g powdered sugar (about 4 cups)

Preparation
STEP 1

Preheat oven to 350°F.

STEP 2

In a large bowl mix eggs, oil, sugar and cinnamon.

STEP 3

Add chopped apples and walnuts and mix it all together.

STEP 4

In a medium bowl mix flour, baking soda and salt. Add flour mixture to apple mixture and mix gently until combined.

STEP 5

Butter or pan spray a 9x13 inch baking dish. Add batter and bake cake for about 45-50 minutes or until a toothpick inserted into the center comes out clean. Let cool completely at room temperature before frosting.

STEP 6

For the frosting with either a handheld mixer or stand-up mixer fitted with a paddle attachment beat butter and cream cheese until light and fluffy. Add vanilla and powdered sugar. Continue beating until well combined. Frost cooled cake over the top and sprinkle with additional chopped walnuts if desired.
