- 2 medium zucchinis, thinly sliced

- ½ teaspoon pepper

- 1 cup shredded Monterey Jack cheese
- 4 tablespoons sour cream
- 1 cup sliced green onion
- ¼ cup grated Parmesan cheese

- 118.29ml chopped yellow onion
- 2 medium zucchinis, thinly sliced
- 2.13g salt
- 2.13g pepper
- 2.13g dried oregano
- 236.59ml shredded Monterey Jack cheese

- 236.59ml sliced green onion

Summer gardens overflow with an abundance of beautiful zucchini. This recipe is a great way to enjoy it and will make a zucchini lover out of anyone.
Preparation
STEP 1
In a large sauté pan, melt butter over medium-high heat.
STEP 2
Sauté mushrooms and onions about 5 minutes or until tender.
STEP 3
Add sliced zucchini and sauté 2-4 minutes or until tender but crisp.
STEP 4
Stir in salt, pepper and oregano. Add cheese, sour cream, green onion and Parmesan cheese. Cook until heated through.
Options
This recipe works just as well with yellow squash or a zucchini summer squash combination.
