Zabaglione is an Italian light boozy flavored custard that is typically eaten warm as a sauce with dessert.
Ingredients
  • 2 cups strawberries, quartered
  • 4 amaretti cookies, crushed
  • 3 egg yolks
  • ⅓ cup sugar
  • ⅓ cup Moscato d'Oro, or any sweet wine such as Marsala
  • Pinch salt
  • 2 tablespoons toasted almonds
  • 473.18ml strawberries, quartered
  • 4 amaretti cookies, crushed
  • 3 egg yolks
  • 78.86ml sugar
  • 78.86ml Moscato d'Oro, or any sweet wine such as Marsala
  • Pinch salt
  • 25.56g toasted almonds

Preparation
STEP 1

Divide strawberries into 2 wine glasses. Top with cookies.

STEP 2

Fill a saucepan 1/3 full with water and bring to a gentle boil.

STEP 3

In a stainless-steel bowl, whisk together egg yolks and sugar. Add wine and salt.

STEP 4

Set bowl into saucepan of boiling water, ensuring it fits snugly without touching water. Whisk vigorously until thick, for 2-3 minutes.

STEP 5

Remove from heat and spoon over berries. Top with toasted almonds and serve.

Options

This Zabaglione is delicious eaten with a variety of other fresh fruit desserts and cakes. You can use Cognac instead wine, and it can be served warm or cold.

If amaretti cookies are unavailable any almond cookie will work well.
