Quick Lemon Thyme Cream Sauce

Ingredients
            - ½ cup butter
 - 3-4 sprigs fresh thyme
 - ½ cup heavy cream
 - Salt & freshly cracked black pepper to taste
 - 1 tablespoon cornstarch
 - 4 tablespoons cold water
 - 2 tablespoons lemon Juice
 
- 118.29ml butter
 - 3-4 sprigs fresh thyme
 - 118.29ml heavy cream
 - Salt & freshly cracked black pepper to taste
 - 12.78g cornstarch
 - 51.12g cold water
 - 25.56g lemon Juice
 
This quick and easy sauce is a perfect accompaniment to roasted or steamed vegetables, fish, or chicken.
Preparation
            
                        STEP 1
                        
                                    In a small pan over medium heat melt butter with thyme sprigs.
                        STEP 2
                        
                                    Once melted add cream and bring to a low boil then immediately lower heat to a simmer.
                        STEP 3
                        
                                    Season with salt and pepper. Mix cornstarch with water to make slurry and whisk in. (Be sure sauce returns to a simmer/low boil to activate cornstarch).
                        STEP 4
                        
                                    Stir and simmer for 3-4 minutes.
                        STEP 5
                        
                                                    Add lemon juice and more cracked black pepper to taste. Remove thyme stems and serve.

                            This sauce also works well with fresh tarragon in place of thyme.
