- 2 tablespoons unsalted butter
- 1 small leek, halved lengthwise, washed well, thinly sliced
- ½ pound cremini or button mushrooms, thinly sliced
- 2 medium cloves garlic, minced
- 1 red bell pepper, seeded and thinly sliced
- 1 (14 ½ ounces) can diced tomatoes, drained
- ¼ cup low-sodium chicken broth
- ¼ cup heavy cream
- ¼ cup fresh basil, thinly sliced
- ½ large lemon, juiced
- 1 pound fettuccine (or any favorite noodle)
- ½ pound asparagus spears, trimmed, sliced on diagonal into 1/2-inch pieces
- Freshly grated Parmesan cheese
- Salt and freshly ground black pepper

- 59.15ml heavy cream
- 59.15ml fresh basil, thinly sliced

- 453.59g fettuccine (or any favorite noodle)
- 226.8g asparagus spears, trimmed, sliced on diagonal into 1/2-inch pieces
- Freshly grated Parmesan cheese
- Salt and freshly ground black pepper
Show off a little with this savory spring recipe. Paired with asparagus, earthy mushrooms and tender sliced leeks, it's a veggie lover's paradise.
Bring a large pot of salted water to a boil.
Heat a large sauté pan over medium-high heat and melt butter. Add leek and stir for 1-2 minutes or until just tender.
Add mushrooms and season with salt and pepper. Stir frequently until liquid evaporates and mushrooms just start to brown.
Add red pepper and garlic and stir for 1 minute.
Add tomatoes, chicken broth and cream. Simmer for 2-3 minutes or until sauce thickens slightly, then stir in lemon juice and basil.
Meanwhile, add pasta to boiling water and cook according to package instructions. Add asparagus 2-3 minutes before pasta is cooked.
Drain and toss with sauce and vegetables. Serve hot, topped with grated cheese.
Additional ingredients such as shrimp, chicken, Italian sausage, broccoli, onion, zucchini, yellow squash, shaved brussels sprouts, and sweet peas are also delicious!
Prepared pasta sauce can be used in place of the canned tomatoes and broth. Simply add it during Step 5 with the cream being optional.
