Sear up bold flavor! This pan-roasted tri-tip is juicy, tender, and perfect for an easy weeknight dinner or special weekend meal.

Preparation
STEP 1

Preheat oven to 350°F.

STEP 2

Season tri-tip with steak rub and leave at room temperature for 30 minutes.

STEP 3

Heat an oven-safe pan (such as cast-iron skillet) to high heat.

STEP 4

Coat pan with olive oil. Sear tri-tip roast or steaks until one side is a deep rich brown. Flip and transfer pan to oven.

STEP 5

Cook tri-tip in oven for about 20 minutes for roast or 5-10 minutes for steaks or until an internal temperature of 130°F for medium-rare.

STEP 6

Let meat rest for 10 minutes before slicing against the grain. Serve as you would any steak or our favorite way with beans (pinto, baked or Santa Maria), pico de gallo and garlic bread.

Options

Tri-tip is also fantastic cooked on the grill. Preheat grill to high. Sear tri-tip until deep grill marks appear, about 5 minutes per side. Reduce heat to medium-low, close lid, and cook tri-tip for about another 15 minutes or until an internal temperature of 130°F for medium-rare. Let meat rest for 10 minutes before slicing. Also delicious served with BBQ sauce.
