Cool off with these sweet, fresh and frozen treats. There are so many different varieties of melons available during the summer months, don’t be afraid to try them all!
Ingredients
  • 6 cups peeled, cubed melon of your choice
  • ¼ cup sugar or honey
  • ½ cup water
  • Fresh mint, basil, rosemary, tarragon, lavender or other herbs (optional)
  • 1-2 tablespoons lime, lemon or grapefruit juice
  • 1419.53ml peeled, cubed melon of your choice
  • 59.15ml sugar or honey
  • 118.29ml water
  • Fresh mint, basil, rosemary, tarragon, lavender or other herbs (optional)
  • 1-2 tablespoons lime, lemon or grapefruit juice

Cool off with these sweet, fresh and frozen treats. There are so many different varieties of melons available during the summer months, don’t be afraid to try them all!

Preparation
STEP 1

Puree melon in a food processor or blender.

STEP 2

In a small saucepan, bring water and sugar or honey to a boil. Turn off heat. Add whole, fresh herbs and allow to steep.

STEP 3

Add citrus juice to blender. Add steeped mixture to taste and desired texture (about 1/2 cup) and puree until smooth. Add more water if too thick.

STEP 4

Pour into molds, leaving 1/4-inch of space at the top. Place sticks in molds and freeze until solid. Run mold under warm water to release popsicles.

Options

Melon varies in sweetness and density so you’ll need to adjust seasonings. Use the zest of your citrus if you wish to add a zippy flavor. Replace the water with coconut milk or add some Greek yogurt to the blended mixture for a creamy popsicle, or add other fruits to the molds. You can even create layered pops with different purees by freezing between layers. Try adding things like chili-lime seasoning or fresh ginger instead of herbs.
