Melon Bruschetta

Ingredients
- ½ large melon (cantaloupe, honey dew, gala, or crenshaw, etc.)
- 1 red chile minced, optional
- 1 cup fresh basil leaves, roughly torn
- 2 tablespoons thinly sliced mint
- 1 tablespoon balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 tablespoon lemon or lime juice
- Pinch of sea salt
- Sliced and toasted baguette
- Burrata, fresh mozzarella, or ricotta
- 0.5 large melon (cantaloupe, honey dew, gala, or crenshaw, etc.)

- 25.56g thinly sliced mint
- 12.78g balsamic vinegar
- 25.56g olive oil
- 12.78g honey
- 12.78g lemon or lime juice
- Pinch of sea salt

- Burrata, fresh mozzarella, or ricotta
Summer melon with a touch of basil and mint come together for a perfect appetizer with bread and cheese or topping for grilled fish.
Preparation
STEP 1
Remove seeds and rind from melon. Finely dice and add to a large bowl.
STEP 2
Add chile, basil, mint, vinegar, oil, honey, lemon or lime juice, and salt. Stir gently to combine and chill.
STEP 3
Serve on crusty baguette slices spread with cheese or serve relish on top grilled chicken, fish or pork.
